Lemon Cashew Energy Balls

  • 1 cup Medjool Dates, pitted
  • 1 cup Raw Cashews
  • ¼ cup Unsweetened Desiccated Coconut (+ more for rolling)
  • 1 tsp. Raw Honey or Maple Syrup
  • 1 tsp. Vanilla Extract
  • Zest of 1 Lemon
  • Juice of ½ Lemon


  • Place all the ingredients into a food processor until a dough forms. You may need to pause and scrape the sides as needed.
  • Once everything is well-mixed, roll the dough into 12 evenly sized balls.
  • Add the extra desiccated coconut over a tray. Drop the balls into the desiccated coconut as you go to coat them.
  • Once everything is ready, store in an airtight container and enjoy!
